How to make Chilindrón Chicken

Season the chicken pieces with salt and pepper. Heat a little oil in a pan and brown lightly. We withdraw and reserve. We prepare a sofrito. Peel and finely chop the garlic cloves. Peel and chop the onion. Heat a little extra virgin olive oil in a frying pan or casserole and cook both over a very low heat for five minutes. Meanwhile we wash the peppers, remove their stalks and seeds and cut into small squares (mirepox). Add the peppers to the pan, the bay leaf and continue cooking for another five minutes. Peel the tomatoes, grate them and add to the pan. Stir, season to taste and cook for a couple of minutes over high heat, allowing the tomato water to evaporate. Finally we add the wine and the chicken, adjust the salt and pepper point again, cover the pan and cook for about 15-20 minutes or until the chicken is done inside and the sauce has become thick. The time will depend on the size of the chosen chicken pieces. Serve immediately or leave to warm before storing in the fridge.
