Chicory is a vegetable belonging to the Asteraceae family with more than a thousand genera and more than 20,000 species. One of its main characteristics is the flower, which is made up of hundreds of tiny flowers.

It is crispy and colorful, it has a characteristic bitter taste that gives a special touch to salads and vegetables that we use in winter. Cooked on the grill, it becomes an ideal garnish for meat and fish.

Its nutritional values ​​are high and it also has a great antioxidant capacity, in fact, it has carotene and other substances capable of counteracting the aging of tissues. Chicory season lasts several months, if you have to buy it, always choose specimens with fresh, healthy and firm leaves. The color is very important, if the leaves are discolored (brownish or yellowish) or you see that they have a sign of damage caused by insects, reject them.

To preserve them, it is preferable not to expose them to light, since their vitamin composition is altered and the bitter taste is accentuated. We must keep the leaves in cool, shady and ventilated places. When putting it in the fridge, we must always do it in a bag with holes to facilitate breathing, but never in airtight containers and one more thing, this vegetable does not support freezing.
