Prawn aguachile: ideal Mexican recipe to enjoy the summer

We start defrosting the shrimp and, with the help of a knife, we remove the intestine. We wash them, dry them with kitchen paper and open them in half, lengthwise. We arrange them in a source and sprinkle them with the lime juice. We leave them to marinate in the fridge for 10 minutes.
We cut the onion into feathers, put it in a strainer and pass it under running cold water. Chop the coriander leaves. Peel the cucumber, open it in half, remove the seeds and grind. Add the lemon juice and season with salt.
Drain the prawns, arrange them in a serving dish, on top of which we distribute the crushed cucumber, coriander, onion and chopped chilli. We serve right away.
