Broccoli meatballs. Vegetarian recipe

If the meatballs are usually made of beef, pork or even fish, it is rarer to make them with vegetables. Today I propose to break stereotypes with this recipe for broccoli meatballs that are truly delicious and extremely easy to prepare.

In addition to being very good, broccoli meatballs are relatively healthy since they are baked in the oven with very little fat. They are ideal if you are taking care of your line or simply want to eat something that will not have such a negative impact on your health. As if all of the above were not enough, I remind you that broccoli is a magnificent source of vitamins and minerals.

Ingredients

  • Broccoli 500 g
  • Ground bread 200 g
  • Purple Onion 0.5
  • Eggs 2
  • Granulated garlic (1 teaspoon) 4 g
  • Gouda cheese 50 g
  • Salt
  • Ground black pepper

How to make broccoli meatballs

We are going to clean the broccoli, cut the stem, separate the flowers and put for 5 minutes in a pot of boiling salted water. After this time we remove it from the water and let it drain for a few minutes.

Finely chop the onion, parsley, cheese and broccoli. We place these ingredients in a bowl in which we break the two eggs. Season with salt and pepper to taste and stir everything well with the help of a spatula. Now add the ground bread and stir everything well again.

We grease a baking tray with olive oil spray. With the hand we are forming small balls of the broccoli preparation. Ideally, these balls should be about the size of a pingpong ball, that is, about 4 to 5 cm in diameter. As we form them, we place them on the tray. Bake at 180ºC for about 30 to 35 minutes.

With what to accompany the broccoli meatballs

Broccoli meatballs are ideal for those who do not want to eat meat or as a garnish for a fish for example. However, I also like to offer them to snack on at aperitif time and I accompany them with a spicy sauce or a thousand island dressing. Do you need more arguments to start preparing them?
