Meatballs with couscous. Recipe


This is an original way to serve one of my favorite dishes since I was little. These meatballs with couscous are a very easy dish to make, complete and that children (and not so children) will surely like. The oriental touch of spices, especially cumin and cinnamon, provides a very rich different flavor.

The ingredients (4 people).

500 g. peeled tomatoes, 400 gr. minced meat (beef or pork), 1 onion, 1 slice of bread, 1 tablespoon of ground spices (cumin, black pepper, cinnamon), milk, olive oil, salt, 250 gr. precooked couscous semolina, parsley for garnish.

The elaboration.

Soak the bread with a little milk on a plate. In a bowl, mix the minced meat with the spices, the bread soaked in milk and lightly drained and a little salt. Knead until a homogeneous dough is left. With moistened hands we are making small dumplings. Reserve cold. Chop the onion finely and sauté with two tablespoons of olive oil, until transparent. Add the tomato and a little salt. Cook, covered, for about 15 minutes.

Blend with a blender and test for seasoning. You can add a pinch of sugar to correct the acidity of the tomatoes, if necessary.

Add the reserved meatballs to the tomato sauce and simmer for about 15 minutes. Separately soak the semolina with 250 gr. of hot water, a little salt and a thread of olive oil. Stir with a fork and let it rest for a few minutes. The quickest way is to mix the ingredients and cook it in the microwave, on maximum power for about 4-5 minutes, stirring occasionally with a fork.

The tasting.

Serve the meatballs with couscous in individual plates, garnishing to taste with chopped cilantro or parsley. If you accompany it with a fresh salad you have a complete and balanced meal.
