How to prepare meatballs in vegetable sauce

Despite not being particularly fond of meat, I have to say that when it comes to me minced I don't put any but. For this reason, elaborations such as these meatballs in vegetable sauce are among my favorite dishes. With a smooth texture and flavor, they are an excellent dish enjoyed by the whole family.

In my family, meatballs in a vegetable sauce have always been welcome on the table. Now I am the one who makes them for mine and the tastes have not changed. A traditional recipe where they exist, very complete and tasty, which is worth incorporating into all recipes.

How to make meatballs in vegetable sauce

In a wide and deep container, we beat the egg and milk. We add the slice of bread and crush it with a fork. Incorporate the minced meat, season and mix well until obtaining a homogeneous mass.

We take small amounts of the mixture and roll them. We pass them in flour and fry them in abundant hot oil for a couple of minutes. We just want them to brown on the outside, so we remove them immediately and transfer them to a plate with absorbent paper, so that the excess fat drains, and reserve until the sauce is ready.

To make the sauce, peel and chop the onion. Heat a little olive oil in a saucepan and cook it over low heat for 10 minutes. Meanwhile, we peel the carrot and dice it. We add it to the casserole and let it cook another 10 minutes.

Peel the zucchini and dice it, add it to the casserole along with the tomato, also diced, and the white wine. We raise the intensity of the fire and wait until the wine has evaporated before watering with the poultry stock.

When the whole reaches a boil again, add the meatballs to the casserole and cook over very low heat for 20 minutes, under cover. At the last moment, we drain the peas, wash them under a gentle stream of cold water and add them. We serve immediately.

With what to accompany the meatballs in vegetable sauce

One of the advantages of these meatballs in vegetable sauce is that they are a dish on their own and they only need a side dish of mashed potatoes, white rice or similar to obtain a complete meal. Precisely for the same reason, the best time to taste them is at noon. A glass of cool white wine and the thing is round.
