Porcupine Meatballs - Traditional American Recipe Great for Family Meals
Do you know the porcupine meatballs? They are a traditional American recipe (somewhat old, but very charming) ideal for solving family meals in one sitting. It consists of introducing rice into the meat mixture, forming the meatballs and baking covered in tomato sauce.
The result is most curious. The rice grains, which are raw and cooked in the oven, they sag slightly, giving the meatballs that look of porcupine from which the name comes. They are tender and tasty meatballs, easy and quick to prepare. Best of all, they do not require any accompaniment, since they have the garnish -rice- incorporated. You can't ask for more.

- Minced beef or veal and pork mix 450 g
- Uncooked long grain rice 100 g
- Water 60 g
- Ground black pepper
- Canned crushed tomato 800 g
- Worcestershire sauce 30 ml

Peel and finely chop the onion and garlic clove. We wash and chop the parsley. Mix in a deep and wide bowl together with the minced meat, the long grain rice, salt and pepper to taste and the water. We will obtain a moist mass that stays together.
Very carefully we take portions of the dough and roll, squeezing slightly and letting a little water drain. We may need to moisten our hands to facilitate the process. We put them in a baking dish greased with a little oil.
Mix the crushed tomato with the Worcestershire sauce and season to taste. Pour the sauce over the meatballs and cover the baking dish with aluminum foil, closing the edges well.
We cook in the oven, preheated to 180 ºC with heat up and down, for 35 minutes. After this time, remove the aluminum foil and cook for 15 or 20 more minutes. At the time of serving we can sprinkle with more chopped fresh parsley and a little bit of grated cheese (optional).
