Interesting project in which the Zaragoza Veterinary Faculty is involved. Alcotec, acronym for Haute Cuisine and Technology, consists, according to what they tell us on the website of the University of Zaragoza, in "a unit to support gastronomic creation, whose actions include advising those Aragonese restaurateurs who want to get involved in haute cuisine innovation projects'.

Tradition has always existed and will exist within the world of gastronomy, but R&D (Research and Development) also struggles to open a gap. Little by little we are getting used, for example, to new ways of transforming ingredients using innovative techniques such as liquid nitrogen. Therefore, it is a good idea for universities to start working together with restaurateurs. What does the future hold?
