Angel´s Food Cake. The fluffiest angelic cake recipe


Ever since I made the Devil's Food Cake with thick chocolate, I have been wanting to try its angelic version. This Angel's Food Cake, which I made following Bea's recipe, is the lightest and most ethereal cake I have ever prepared, almost like putting a piece of cloud in your mouth.

To make this recipe, a special aluminum mold is used that we must not grease, so that the dough adheres well to the walls and rises as much as necessary. It has small legs to support it when turning it over when we remove it from the oven, in this way if the cake cools upside down, the dough does not lower.

  • Pastry flour 100 g
  • Powdered sugar 200 g
  • Salt a pinch
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

How to make Angel´s Food Cake

We start by preheating the oven to 170º. Sift the icing sugar and flour separately twice. Then, beat the whites with the cream of tartar and salt with a mixer on low speed, until the cream of tartar has completely dissolved. We increase the speed and beat for a few minutes until the whites have mounted and soft peaks form.

Without stopping beating, we lower the speed and add the sugar by the spoonfuls, letting everything join between tablespoon and tablespoon. The whites should be firm and shiny. Add the vanilla extract and beat for 1 more minute.

We slow down. Add a tablespoon of flour and beat until well incorporated. We repeat with the rest of the flour until finished. The whites should look soft and fluffy. We pour the dough into the mold, without greasing, making sure that the dough is evenly distributed and reaches the base.

Bake for 25 or 30 minutes, without opening the door, until we see the surface of the golden dough or until it comes out clean with a toothpick. With great care, we remove the mold from the oven. We turn it over and let it cool for 1 hour. After this time, we pass a knife around the edges of the mold to detach the cake and turn it over on a plate or tray.
