Rice with mushrooms with thyme. Recipe
Rice is a food with many virtues and in my house it is one of the companions par excellence. These days I prepared this simple but very tasty rice with thyme mushrooms to accompany some grilled beef medallions.
The recipe for this rice is very easy and it is perfect to accompany all kinds of meats. The ingredients: 1 cup of rice, 300 grams of mushrooms, 2 chives, 2 cloves of garlic, several sprigs of fresh thyme, olive oil, 2 cups of vegetable broth or water, salt and pepper to taste.
Preparation: in a pot or saucepan, sauté the chives cut into rounds with olive oil without letting it burn.
Then the rice is added, it is sautéed a little and the vegetable broth or the salted water is added and it is left to cook. When a good part of the liquid has been consumed, lower the heat and continue cooking.
Apart in a frying pan, fry the cut mushrooms and the crushed garlic cloves in a little olive oil.
When the mushrooms begin to cook, add the fresh thyme and leave a little more in the pan. The idea is not to overcook the mushrooms.
Finally, when the rice takes a few minutes to be ready, add the mushrooms and stir with the rice.
Cooking is allowed to finish. And ready to serve !!!
