Cod with apple and mustard seeds
The fruit combines perfectly in many gastronomic elaborations, a recipe that we really like is the Cod with apple and mustard seeds. It is easy to make and it is delicious, so you will surely repeat.
The ingredients 3 previously desalted cod fillets, 3 red onions, 3 apples, a couple of teaspoons of butter, ½ cinnamon stick, 2 tablespoons of white wine vinegar, a handful of mustard seeds, 2 tablespoons of flour, ¼ glass of wine white, 1 tablespoon of honey, oil, salt and pepper.
The preparation Prepare the apples, peel them and cut them in half, then remove the core and cut each half into 4 wedges. In a frying pan, add the apple segments, butter and cinnamon, sautéing the whole mixture over medium heat. When you see that the apples are golden brown, add the wine and after about three minutes, also add the honey and remove the pan from the heat, reserving it.
Peel and julienne the onions, then sauté the julienne in a frying pan over low heat with a little oil until you see that they become transparent. Add the vinegar and let it evaporate. Now season the onion julienne and reserve.
Continue with the cod, flour the loins and fry them in a pan with plenty of oil, turning the loins from time to time so that they brown properly. Now you just have to assemble the plate, place the loin in the center of each plate, on top of it the onion and the apples on one side. Sprinkle the whole with the mustard seeds and serve.
