Oatmeal and almond bars: snacking recipe to recharge your batteries
Oatmeal flakes are already a staple in almost everyone's pantry. Cooked in the form of porridge or porridge I like them a lot, but they also give a lot of play as they become crunchy if baked with them, like in these oatmeal and almond energy bars.
The texture may vary a bit depending on the thickness of the flakes; it is advisable to look for them fine, of which they can be consumed without the need to cook them. To make these energy bars I have only used beaten egg trying not to sweeten them too much. You just have to be careful when cutting them because they crumble a bit, being low in fat, but otherwise they are very easy to make.

- Raw rolled almonds, or chopped or in canes 55 g
- Egg L 2
- Sugar 100 g
- Vanilla 5 ml
- 1 pinch salt
- Poppy or chia seeds, 2 teaspoons

Preheat the oven to 200º C and grease or cover a square or rectangular mold with greaseproof paper. Arrange the oat flakes with the almonds in a pan without any oil, bring to the fire and cook, stirring constantly until the aromas come out. Cool slightly.
In a bowl, beat the eggs with the sugar with the help of a whisk, until very foamy and dense. Add the salt and the essence, and beat a little more. Add the mixture of oats and almonds, add the poppy seeds and work everything until you get a homogeneous mixture.
Place in the mold, leveling the surface well. Bake for about 30 minutes, until well browned. Let cool on a rack. Cut into rectangular bars across the width and place them on one side on a tray.
