Raspberry bavaresa with yogurt

This is a very smooth and rich dessert that you will enjoy after a good meal. The Bavaresa of raspberries with yogurt is easy to make and does not require a long preparation time.

The ingredients 250 grams of raspberries, ½ kilo of yogurt preferably skimmed, 5 gelatin leaves, a little orange peel cut into julienne, 25 grams of honey, ½ glass of semi-skimmed milk and 2 teaspoons of vanilla sugar.

The preparation Put the gelatin sheets in cold water for 5 minutes, while heating the milk together with the honey in a saucepan. Drain the gelatin and place it in the saucepan with the milk and stir, making sure that the milk does not boil while the gelatin dissolves. In a bowl, add all the yogurt and add the sugar, stir and also add the previously strained milk. Then pour all the content into a Bavarian mold and put it in the fridge for 5 hours or until you see that it has already set.

Wash the raspberries and then dry them, then crush 100 grams of them in the blender and pass the resulting juice through a fine strainer to separate the remaining seeds. Put the bavaresa mold for a few seconds in hot water to be able to unmold it.

Place the bavaresa in the serving dish and water it with the raspberry juice, finish decorating the dessert with the rest of the raspberries and the orange julienne.

The tasting Rich rich, as Arguiñano says, and it is so. We really enjoy it when we have a Bavarian dessert.
