Bil Shareyah or rice noodles. Egyptian roots recipe


For years I have been preparing rice with noodles and serving it as a side dish or a first course, but until today it had not occurred to me to share the recipe or find out a little more about its origin. I have always associated it with Dominican cuisine, where it is tremendously popular, however it is not here where its roots lie but in Egypt.

This striking dish is part of the cultural heritage that Middle Eastern emigrants left on the Caribbean island there in the late 19th and early 20th centuries. Bil shareyah (original name) or rice with noodles originates from Egypt, although many other neighboring countries have their versions. It is an inexpensive, fast and tasty recipe that we recommend 100%.

  • Extra virgin olive oil

How to make rice with noodles or bil shareyah

Before starting we need to measure the amount of water so that the rice with noodles is not dry or too watery. To do this, we put the rice in one cup, the noodles in another and check their volume. We measure twice the volume of rice and the same measure of noodles in water and reserve until the moment of cooking.

We peel the garlic clove. Heat a little oil in a pan of about 24 cm in diameter and brown the garlic over low heat and turn it from time to time. We try not to over-roast it, as we only want it to flavor the oil. Once the garlic clove is golden, we remove it and discard.

Add the noodles to the pan and toast them while stirring gently. Add the rice and stir so that each grain is well impregnated with oil. We water with the reserved water, season and cook over medium high heat for five minutes. We lower the heat and finish cooking over a low heat, covered, for 15 more minutes. Let it rest for five minutes before serving, sprinkling it with chopped fresh parsley (optional).
