Red plum sponge cake: easy recipe to take advantage of this seasonal fruit


There are days when you want to have a tea or chocolate in the middle of the afternoon and of course, if it is accompanied by something sweet like this red plum cake, all the better. It is very simple to do and it helps us to take advantage of and take plums in a different way.

We can substitute the fruit for any other that we like without major problem. You just have to be careful that it is not too juicy so that the water in it does not add extra liquid to the dough. We can even chop a piece of the fruit that we choose to mix with the dough.

  • Pastry flour 175 g
  • 1 teaspoon baking powder
  • Orange liquor 15 ml
  • Orange zest 1
  • Orange juice 60 ml
  • Brown sugar

How to make red plum sponge cake

We preheat the oven to 170º with heat from top to bottom. Grease and flour a mold of 18 cm maximum. In a bowl, beat the butter with the sugar until it is creamy. Add the eggs one by one without stopping beating, the orange zest, the liquor and the juice.

We pour the sifted flour with the impeller, mix perfectly and pour the dough into the mold. We distribute the plums in segments on the surface, previously washed and dried. Sprinkle with brown sugar and bake for about 40 minutes, or until the cake is ready.

We remove the red plum sponge cake from the oven, ** let it rest in the mold for about 10 minutes. Unmold and transfer to a rack to cool. Once cold we serve accompanied by sour cream if desired.
