This cake recipe made with dried fruits and raisins has the peculiarity that it is made without using eggs, so since I had many nuts and various kinds of raisins at home, I set out to try this curious recipe, which I had seen on a blog called Show me the curry and as you will see, it was a success.

The recipe can be made with the ingredients that I indicate below or with others that you have at home, as long as you keep the proportions of sugar, raisins and nuts in equal parts, and double that amount in flour and in water. So now, when putting the ingredients, I will talk about cups and not grams as usual. I used a cup for breakfast as a measure, the typical mug or mug with handle.

Ingredients for 8 or 10 servings

  • 1 cup of mixed nuts (I used almonds, peanuts, pine nuts and walnuts), 1 cup of raisins (I used plums, raisins and apricot apricots), 2 cups of water, 1 cup of sugar, 2 cups of flour strength, 1/2 cup of butter, 1 teaspoon of cinnamon, 1 teaspoon of nutmeg and 1 teaspoon of baking powder or propellant.
  • Optionally, 1 teaspoon of vanilla essence and a tablespoon of aged rum

How to make a cake of dried fruits and raisins, without eggs

In a small saucepan, we put the two cups of water and the cup of mixed raisins and put it to cook for 10 minutes but it has to cook over low heat and with the lid on so as not to evaporate too much. After that time, we turn off the heat, add the butter to the water with the raisins and let it mix and cool.

Meanwhile, we mix the strength flour with the yeast, sugar and spices in a bowl, and we add the contents of the saucepan and mix it, integrating all the ingredients well. Then, we add the assortment of nuts and add the optional aromas of rum and vanilla if we want, and we put the oven to preheat to 200º

We grease a round sponge cake mold, or one of the type bundt, and we add the dough carefully so as not to stain, since the dough is somewhat thick and a little lumpy from so many bits that it has between the raisins and the nuts. We let it settle well by tapping the mold and we put it in the oven in the central area.

Bake at 190º for 35 or 40 minutes, until we can put a wooden skewer and it comes out clean.In my case, it was 37 minutes, but you already know that each oven is different, so try until you see that the cake is well done.

On the outside, it will have a golden color similar to that of coffee with milk. We turn off and let our cake cool in the oven for 30 minutes, and then we let it cool down to room temperature before unmolding it.

Tasting

The cake with dried fruits and raisins, without eggs, is somewhat moist in its dough, so it can be taken alone, as a dessert, or accompanied by a coffee or tea, as a snack or breakfast. With a simple sprinkle of icing sugar, it is great to offer to those who want to please. They will surely enjoy it.
