Start by preheating the oven to 180 degrees and grease the pan with the butter, lining the base with baking paper.

Then prepare the topping, for this mix the flour and the cinnamon in a bowl and incorporate the butter in pieces by rubbing it with the tips of your fingers, add the brown sugar and form a ball with all the ingredients. Wrap it in plastic wrap and freeze the topping for fifteen minutes. Once frozen, grate the topping onto a kitchen paper towel and store it in a cold place.

To make the cake, start by peeling and removing the apples and cutting them into thin slices. Put a pot on the fire and add the water and the three tablespoons of sugar and cook until it boils, add the apples and let them cook for five minutes, drain and reserve. In a bowl or glass of the blender beat the butter and sugar with rods until fluffy, add the eggs one by one. Add the sifted flour and milk in two alternate batches.

Put two thirds of the dough in the bottom of the pan, spread the apple as drained as possible and put the rest of the dough on top. Sprinkle the cinnamon topping over the entire surface of the cake. Bake for fifty minutes or until a toothpick sticks it out clean.
