Fat free honey and spices sponge cake: aromatic recipe to accompany coffee or tea


It is impossible to deny it: in my house I bake sweets with honey and loaded with spices all year round. However, it is true that it is during the coldest months when these types of products are most desired, and that is why you have to take advantage of when summer is left behind. This fat-free honey and spice sponge cake recipe is ideal to pamper yourself with a cup of coffee or tea.

It is true that it is a fat-free sponge cake, since it does not require eggs or the addition of oils or butter, but let's not fool ourselves, it is well loaded with calories. Of course, that extra contribution can come in handy to recharge the batteries, especially if the temperatures have dropped a lot. Honey is a fantastic product, very energetic and very aromatic, which leaves a juicy crumb and enhances the flavor of the spices.

  • Pastry flour 500 g
  • Baking soda (2 teaspoons) 12 g
  • Ground cinnamon 10 g
  • Ground ginger 5 g
  • Ground nutmeg 1 good pinch
  • Star anise 1 good pinch grated (optional)
  • Ground cloves 1 good pinch
  • Salt 2 g
  • Honey 250 g
  • Sugar 40 g
  • Milk or vegetable drink 300 ml
  • Orange zest 1

How to make a fat-free honey and spice cake

Preheat the oven to 180º C and prepare a medium-sized, round or square mold. If we use it smaller, the thicker the crumb will be, but a square brownie-type format is more recommended. Arrange the flour in a large bowl and add the baking soda, salt and all the spices. Mix a little with some rods and form a hole in the center.

Add the honey, sugar and milk, and mix these ingredients a little. Add the orange zest and work the entire dough until it is homogeneous, without lumps and without dry traces. Let stand about 15 minutes for the aromas to settle. Pour the batter into the prepared pan, leveling the surface well with the back of a spoon or with a spatula.

Bake for about 30-40 minutes, until it is well browned on the outside and when you prick the center with a toothpick it comes out clean. Wait a few minutes out of the oven, remove from the mold and let cool on a rack. We can give it a simple glaze by mixing icing sugar with a little orange juice, painting it still hot. Once cool, cut into portions with a good serrated knife.

This non-fat honey and spices sponge cake is a delight to have as a snack or with your mid-afternoon coffee. It is a thicker batter than our more traditional biscuits tend to be, but that makes it ideal for dipping in a teacup, and it will last for many days if stored in an airtight container. In fact, it's best the next day, when the spicy aromas deepen. Being so energetic, it is advisable to serve small portions.
