Nectarine and blueberry sponge cake, recipe to take advantage of seasonal fruits
I always try to use seasonal products for their quality and price, and in recent days you will have noticed that summer fruits are very present in the recipes that I am publishing. If the red peach is on our table every day, the nectarine is not far behind, so one of the ways to have it for dessert is with this rich recipe for a cake with nectarines and blueberries.
It is not that it happens to me every day, since I hardly have time to visit as many blogs as before, but sometimes it is enough to see an image to know that a recipe interests you just as it happened to me with the one I present today and from which it is adapted my proposal. A delight of result that surely will not leave you indifferent.

- Butter at room temperature 225 g
- Sugar 325 g
- XL Eggs 3
- Lemon zest 1
- Vanilla essence 1 teaspoon
- Pastry flour 345 g
- 1 teaspoon chemical yeast
- Nectarines 2
- Blueberries 100 g
- 1 teaspoon brown sugar
- Icing sugar

Grease and lightly flour a round mold about 24 cm in diameter. We heat the oven to 160º with heat up and down. Beat the butter with the sugar and the lemon zest until you get a smooth cream. We add the eggs one by one, letting the first one integrate well, before adding the next one.
We add the vanilla and the pinch of salt. Finally we combine with the sifted flour and yeast until we have a homogeneous mass. Carefully pour into the mold and cover with the nectarines and the clean and chopped blueberries. Sprinkle with the brown sugar.
Bake for an hour and a quarter, more or less, or until the cake is done. Remove from the oven, leave in the mold for about 10 minutes and remove from the pan on a wire rack. When the cake is cold, sprinkle with icing sugar before serving.
