Cheese and cherry cup cake, an express recipe in all the rule


A couple of months ago we told you that we had done a test with the microwave and we decided to do the experiment with these financiers with raspberries. We try to take advantage of this appliance and use it for more than just heating water and milk, so today we have done a second test and the result has us excited: cup cake with cheese and cherries.

Go ahead, the texture is not like that of a traditionally baked sponge cake and it can be dry if we spend time. To appreciate this recipe you have to understand that it is a quick preparation for a rush or an extreme craving. And for it to come out well it is necessary to control the times in our microwave, so you may need to do more than one test.


For 1 units
  • Butter 30 g
  • Egg 1
  • 2 tablespoons sugar
  • 1 1/2 tablespoons cream cheese
  • 1 tablespoon lemon juice
  • 5 tablespoons wheat flour
  • 1/2 teaspoon baking powder
  • Pitted cherries to taste

How to make a cup cake with cheese and cherries

We melt the butter for a few seconds. We put on top and in this order: the egg, the sugar, the cheese, the lemon juice, the flour and the chemical yeast. We stir everything perfectly until we get a homogeneous mass.

We wash and dry the cherries. Bone and chop the fruit before mixing it with the dough. Cook in the microwave for a couple of minutes, for a machine with 800W power; if yours has more, reduce the time. Do not open the microwave until the cake has risen completely. Consume at the moment.

With what to accompany the cheese cake and cherries in a cup

As with all this type of sponge cakes made in the microwave, the cup cake with cheese and cherries must be eaten fresh. If we want to take it as a dessert, we can have the dough prepared before we start eating and when we are with the second course, make the cakes.
