Lemon snacks: recipe
There are many of us who love citrus desserts for their refreshing power and acidic flavors. Today I bring you a very simple sweet, but nevertheless perfect to end a hearty meal, the lemon sandwiches, which, very cold from the fridge, become a delicious cake that you will surely want to repeat on more occasions.
This dessert is baked in a square or rectangular mold and then cut into portions to the size we want, but as you can see it can also be left uncut in the form of an exquisite lemon tart.

- Butter 150 g
- Lemon juice 180 ml

We will start by preheating the oven to 180 degrees with heat up and down and middle rack position. We grease a square mold of 24 centimeters on each side.
In a bowl mix the flour with the brown sugar, add the diced butter and make crumbs with your fingers. We crush these crumbs at the base of the mold without going up the sides evenly and bake the base 15 minutes. Let it cold down.
While we prepare the lemon cream. Melt in the microwave taking care not to burn the white chocolate for desserts, a minute and a half at 500W will be enough.
In a saucepan mix the eggs, sugar, lemon juice, zest and food coloring if desired and cook this mixture stirring without stopping just until it seems to boil and the cream has thickened slightly. Let's turn the cream over the melted white chocolate and stir with a spatula until you get a smooth cream.
Pour this cream on top of the baked base and slightly move the mold so that it is level. We let it warm and then we reserve in the fridge a minimum of three hours until it hardens. Once solid, cut it into portions with a sharp knife. We serve cold with icing sugar sprinkled.
