Bites of meringue with hazelnut, recipe to sweeten the after-dinner

I don't like meringue if it's not baked. The texture, however well mounted it is, is not pleasant to me. On the other hand, if it is baked or at least we roast it with a blowtorch, it is something else, I love it. These hazelnut meringue sandwiches are delicious.

To make this recipe it is important to control our oven very well so that the golden color of the meringue is just right, without passing us, and that the interior is juicy. Once the oven is turned off, we will let the snacks cool completely inside, so we make sure that they are completely dry before consuming them.


For 12 units
  • Egg white 2
  • Icing sugar 75 g
  • 1/2 teaspoon refined cornmeal
  • Lemon juice a few drops
  • Ground hazelnuts 40 g

We heat the oven to 145º C with heat up and down without air. We assemble the egg whites until stiff. When they are frothy and start to form peaks, add the sugar little by little, the refined corn flour and the lemon juice.

We mount until we get a hard and shiny meringue. Finally we add half of the ground hazelnuts in the dough, joining gently so that the meringue does not come down. On a baking sheet lined with suitable paper we make meringue mountains, trying to make them all the same size.

In this case I have used a pastry bag with a star nozzle, so that the result is more attractive. Sprinkle with the rest of the ground hazelnut and bake at 100ºC for 45 minutes. We turn off the oven and let the meringue bites cool inside to dry well. We remove from the oven and store in an airtight container, away from moisture.

What to accompany the meringue sandwiches with hazelnuts

These hazelnut meringue bites should be allowed to dry well inside the oven, turned off so that the texture outside is crisp and the inside smooth, but not chewy, but almost like a cream. We must keep them away from moisture in any case so that they do not spoil. They are perfect to accompany the desktop.
