When I saw this recipe for potato bombs in the book of the perfect couple, the potato and the egg, I could only think of the great reason that the authors of the book have. Although in this case the egg is an additional ingredient to the recipe or less important than the potato itself.

The amounts that I put below are to make this recipe as if it were an aperitif or a very light first. When going stuffed if you want you can put them as a main dish and accompanied by a little additional filling.

Ingredients for 4 people

  • 400 gr of potatoes, 1 onion, 150 gr of minced beef, 1 garlic, 1 good jet of chilli sauce, 100 ml of tomato sauce, olive oil, flour, breadcrumbs, eggs and salt.

Making the potato bombs

Cook the potatoes, once clean, in water for about 30 minutes. They must be soft so the time will depend on the size of the potatoes.

While the potatoes are cooking we make the filling. It is about making a sauce and making it dry with the finely chopped meat, onion and garlic. When the meat has taken color, add the tomato sauce and the chilli sauce, stir and cook for about 10 minutes until it is very dry.

Once the potatoes are cooked, we cool them to be able to peel them and mash them with a fork. We add salt, freshly ground black pepper and a little olive oil. We remove.

We form some balls and crush them. We put a little filling and close them. To fry them we pass them through flour, egg and breadcrumbs.

The name, recipe for potato bombs, is given by the shape of a meatball they have and also by the filling that we have put in it, a little spicy. On the one hand the spiciness can be regulated but we can also fill them with one and a thousand things. Cooked vegetables, mushrooms, fish with a powerful flavor, etc.
