Traditional Buñuelos de Águilas: Carnival recipe for young and old
One of the festivals that most arouses me is the Carnival, because in my family it was never celebrated but I have always seen with interest how they celebrate it in many places in Spain and around the world. Of course, I am also attracted to the recipes associated with this party, and I have decided to try some, such as the traditional Carnival de Águilas fritters.
The Carnivals of Águilas are one of the most famous in the Region of Murcia, and were declared of National Tourist Interest in 1997. There they live in style every year, as María de Cosicas tells us sweet and some salty, whose blog I have adapted the recipe. I don't usually make a lot of fried sweets at home, and I love how easy, simple and delicious they are.

- Egg L 1
- Milk 125 ml
- Extra virgin olive oil for the dough 30 ml
- Pastry flour 125 g
- 1 tablespoon sugar for the dough
- Chemical yeast (1 tsp) 4 g
- Salt 1 pinch
- Extra virgin olive oil for frying
- Sugar to coat

Place the egg in a bowl together with the milk and the olive oil. Beat well with a few rods. Incorporate the sugar, the flour, the chemical yeast and the pinch of salt, and beat again with energy until obtaining a homogeneous mass. It must have the consistency of a porridge not too thick and without lumps.
Bring a small pot or high saucepan with plenty of olive oil and put on the fire. When the oil is very hot, add tablespoons of dough to form the fritters, better working in batches, without filling it too much. Leave to fry on each side until golden brown to taste, watching carefully as they are done very quickly.
Remove the fritters as they are ready with the help of a slotted spoon or similar utensil. Leave on absorbent kitchen paper so that they lose excess oil. Continue with the rest of the dough. Coat the fritters in sugar when finished, to taste.
What to accompany traditional Carnival fritters with
The traditional fritters of Carnival of Eagles are usually enjoyed accompanied by a glass of hot chocolate, with the thickness to taste of each one. They are delicious freshly made, although they are still very rich after a few hours. Ideal for breakfast or snack.
