After the Christmas Eve and Christmas binge eating, we feel like continuing to enjoy our vacation days, in which we try to eat very rich but lighter dishes so as not to feel heavy, (or guilty) That is why I propose a recipe full of flavor but cooked grilled, a head of loin in oyster sauce with which you will also not spend more than a euro per serving since this meat is very cheap.

The tenderloin head is the top of the pork tenderloin and is a fatty, juicy meat that can be used for grilling, adding to vegetable dishes, or as it is today used in grilled recipes. To give it a special touch, we have prepared it marinated in oyster sauce, which gives it an intense flavor similar to that of barbecue sauce but with an Asian touch. Do not stop trying it.

How to make a loin head with oyster sauce

We cut the head of loin into eight thick fillets approximately 1.5 cm thick, thus calculating two fillets per person. Once cut, we varnish them with two or three tablespoons of the oyster sauce, leaving them on top for about ten or fifteen minutes so that they are macerated before cooking.

We heat the pan without putting oil and let it reach a good temperature so that it helps to brown the outer layer of the pork head fillets when we put them on the fire. We do it by placing the layer impregnated with the oyster sauce in the frying pan and we take the opportunity to varnish the other side with the rest of the sauce.

While the pork fillets are cooking, we prepare the garnish. In this case we have made a salad mixing the lettuces with the tomato and dressing with an oil vinaigrette and wine vinegar. On the other hand, we cut the avocado into four portions and cut each of them into cubes.

We let the steaks cook on the grill for two or three minutes on each side, and when finished, we rub them with the pan so that they collect the sauce and take on more color. We serve two steaks per plate and complete with the salad and avocado as a garnish, bringing to the table immediately.
