Ham and potato cannelloni, express recipe

I do not remember the amount of time that these ham and potato cannelloni became part of my culinary repertoire. I know they weren't your own idea. I saw them on a cooking blog, whose name I deeply regret not remembering or mentioning. From the first moment, I knew that I was going to like them, that they were going to solve many moments of rush and that they would stay with me forever. So it was.

For some strange reason, I usually prepare these ham and potato cannelloni at this time of year. I suppose that because it is not an excessively heavy elaboration, and that is what the body needs in these months. My children ask me to do them often and I honestly think I should listen to them more. Because they are tasty, easy and quick to prepare. An express recipe in all the rule.

How to make ham and potato cannelloni

Heat the milk and water in a large saucepan. Season and add the dehydrated potato flakes. Stir constantly until it begins to boil and thicken. So, remove from the heat and add the butter. Stir again until incorporated and allow to temper.

On the mashed potato, I have used dehydrated potato flakes for convenience and because this is an express recipe. However, if you have time, I recommend that you make the homemade mashed potato with fresh produce. The dish will gain in flavor and, above all, in texture.

Meanwhile, we spread the eight slices of York ham on a clean surface. We spread the pate on all of them, spreading it on one of the narrowest ends. On the pate, we place an adequate amount of mashed potatoes. With a couple of tablespoons we will have enough.

We fold one end of the ham slice over the mashed potatoes and roll it up to the opposite end. We carry out this operation with all the slices. Once ready, we place the ham cannelloni in oven dishes covered with tomato sauce, two per plate. We cover the cannelloni with the remaining tomato sauce and sprinkle them with grated cheese. Bake at 200ºC until the cheese melts and the surface begins to acquire a golden hue.

Accompanied by a green leafy salad, these ham and potato cannelloni are a good dinner in themselves. But they can also be part of a more robust menu if we serve them as a first course, even as a second, for a mid-day meal.
