Ingredients

  • Grated carrot 180 g
  • Mascarpone cheese 450 g
  • Sugar 180 g for base and 100 for cream cheese
  • Egg (2 for the base and 2 for the filling) 4
  • Pastry flour 150 g
  • Chemical yeast one tablespoon dessert
  • Ground cinnamon a teaspoon of coffee
  • Liquid cream 100 ml
  • Strawberry jam to decorate
  • Sunflower oil for carrot base 100 ml
  • Salt for the base, a pinch

To make the carrot base or sponge cake, mix the carrot with 2 eggs, flour, yeast, salt, sugar and cinnamon and beat well. Then we add the sunflower oil and when we have a homogeneous mixture, we put it in the cake pan as a base.

On the other hand, we prepare the filling of the cheesecake, mixing the mascarpone with two other eggs, the sugar and the liquid cream. We beat and serve it on the carrot base, taking care that it does not fall from very high so that both masses do not mix.

Bake at 180º for 40 minutes and turn off the oven, leaving unopened and waiting until the cake is very cold before taking it out, so that it is in its place. Decorate with strawberry jam or some red fruit and serve.
