Come on, I take a deep breath and say it, - I have to make a confession -, the zucchini from the garden that my father cares for no longer arrived at home, although I don't know if it's from reading the post where I “protested“Because of the enormous amount that I received daily (which I hope not, since my father can be many things, but he has never been spiteful) or that they have stopped growing and the poor man no longer had to bring me. The fact is that when I wanted to cook this zucchini and minced meat casserole, I had to go buy a couple of zucchini at the grocery store.

As Nuri weighed them (my trusted greengrocer) she looked me in the face and told me with a tinkling tone and that half crooked smile, which comes out to all of us when we don't want to smile and we can't help it, - father had no zucchini in the garden? - (another who also read the post from the other day), that crossed mine.

The ingredients

1 kilo of zucchini, 3 eggs, 400 grams of minced meat, 4 canned anchovies, 1 mozzarella ball, 4 tablespoons of grated Parmesan, aromatic herbs, nutmeg, oil, breadcrumbs, butter, salt and pepper.

How to prepare the zucchini and minced meat casserole

We clean the zucchini and cut them into slices. We put them in a pan with a little oil and we cook them over a very low heat. We season it with a pinch of salt and pepper and add the various aromatic herbs to taste (in this case I used a pinch of parsley, pebrella or jedrea, oregano and thyme). We also add the finely chopped anchovies.

In addition, we fry and brown the meat with a little oil over medium heat, salt and season with grated nutmeg.

In a bowl, beat the eggs with the Parmesan. We mix the zucchini, the meat.

Spread a baking dish or casserole in a little butter or oil and sprinkle it with breadcrumbs, pour the mixture from the bowl on top and cover with slices of mozzarella.

Cook in the oven for about 20 minutes, until the egg is set. In the last 5 minutes or just before serving, we can add a touch of grill to brown on top.

The tasting

The zucchini and minced meat casserole should be eaten very hot, but we can still prepare it in advance and heat it with the touch of gratin just before serving.

If we have individual oven casseroles, we can distribute it and make one for each guest, it will always win in appearance in the presentation at the table.
