Chicken casseroles with beans. Easy Mexican recipe
One of the things I like the most in the kitchen world is, without a doubt, the combination of different elements that, at first glance, were not designed to be together. In other words, the fusion of styles and flavors has always been very inspiring to me.
Today I propose this recipe for chicken casseroles with beans that are a visual and gustatory wonder. We could say that it is a very personal and different version of a burrito. This time, the wheat tortilla will be our base to form an edible casserole that, with cooking, will harden.

- Cooked red beans 200 g
- Chicken breast 2
- Small Italian green pepper 1
- Extra virgin olive oil 15 g
- Ground cumin 5 g
- Grated cheese
- Ground black pepper

To start we are going to boil the chicken breasts in a pot with water and salt, for about 25 minutes. We remove them from the water and we shred. We reserve. Now we chop the onion and the pepper. Heat the oil in a frying pan in which we fry the onion for about three minutes. Then we add the pepper, season and stir. We leave in the fire, at medium intensity, for about 12 minutes.
We drain the beans from all the water and add them to the pan with the onion and the pepper. We immediately stir and add the shredded chicken. We adjust the seasoning with salt and pepper to taste and leave about five more minutes on the fire. We remove from the fire and reserve. Now we are going to form the casserole by heating the tortillas in the microwave for 15 seconds. This will cause them to become slack. We put them in molds for muffins or cupcakes and we give them the shape of a casserole, folding them inwards. We fill it with the chicken mixture, sprinkle grated cheese and bake, at 180ºC, for about 15 minutes.
What to accompany the chicken casseroles with beans
I recommend you try these chicken casseroles with very hot beans accompanied by Mexican red rice for example. The ideal is to eat them as soon as you take them out of the oven since they do not support a reheated one as well. You can enjoy them with a cold beer.
