We crush the cookies without actually pulverizing, nothing happens if we notice larger pieces than others. We melt the butter, in the microwave or in a double boiler, and add it to the crushed cookie together with the sugar and a pinch of salt. Mix well and divide into four cups.
Next we prepare the filling and, for this, we assemble the cream (which must be very cold) with electric rods (or by hand) until it is very firm. Add the cream cheese, previously beaten, the vanilla essence and the icing sugar. We stir until obtaining a homogeneous cream, we pass to a pastry bag and fill the glasses.
In a saucepan, heat the red fruit jam together with the lemon juice. Remove from the heat when it begins to boil and let cool completely before covering each cheesecake with it. We finish decorating with raspberries, blackberries, etc and some sprigs of fresh mint.
