Eggplant chips with rosemary

A much healthier snack than potato chips and that will also surprise you with its texture and flavor, are the rosemary aubergine chips. If you try them, you get hooked.

The ingredients 1 large eggplant, 1 bottle of sparkling water, flour, rosemary salt and olive oil.

The preparation Prepare the rosemary salt, mix the same amount of coarse salt and fresh rosemary and grind in the mincer. Cut the aubergine into slices as thinly as possible and soak in the sparkling mineral water for 15 minutes.

Heat plenty of oil in a frying pan and flour the eggplant slices, when the oil is hot (without it getting to smoke), fry the aubergines on both sides and be careful not to burn, as they are done very quickly.

Place the aubergines on absorbent kitchen paper and then sprinkle with the rosemary salt on the plate.
