Today we are going to prepare a cod and seafood chowder, an Irish spoon recipe, with a texture between soup and cream, and all full of delicious pieces of fish, seafood, and vegetables.

Ingredients

  • Skrei cod fillet 2
  • Clams 400
  • Prawns 8
  • Potato 4
  • Fish broth or stock
  • Leek 1
  • Celery 1
  • Butter 50 g
  • Bacon 50 g
  • Fresh thyme
  • White wine 50 ml
  • Liquid cream for cooking to give body and decorate 50 ml

All the ingredients, except for the potatoes, cook very quickly. For this reason, we start by putting the potatoes, peeled and cut into irregular pieces, in a saucepan with cooking water and salt, letting them cook for about 15 minutes, without being fully cooked.

On the other hand, in a wide frying pan, melt the butter and fry the finely chopped bacon. Add the leek and celery, also very chopped, and let them cook for a while without toasting. Add the clams, which we will have had in cold water, changing it a couple of times, and cover with a saucepan lid to help them open. Once the clams are open, we remove them from the pan.

Add the skrei cod cut into cubes and the prawns, peeled but leaving the head whole, and let them cook for another couple of minutes on each side. Then we take them out and reserve them together with the clams. It is time to add the fish broth and the drained potatoes to our sauce, letting them finish cooking with the stew we are making. Add the thyme sprigs and cook for approximately five more minutes.

When the potatoes are ready, add the prawns, clams and skrei cod and let them cook together for a minute. It is time to add the liquid cream, just a little to bind a little and thicken the chowder and let our stew take a little body, stirring carefully so as not to break the pieces of fish. Sprinkle with chopped parsley and take to the table.

The cod and seafood chowder is a very comforting meal for the cold and rainy days of winter as it allows you to warm up with each spoonful. You can take it with a white wine of your liking or if you want, as it is an Irish recipe, with a Guinness. With a dessert like Carrot Cheese Cake with mascarpone you won't need anything else.
