Mint lamb chops. Recipe

Surely this summer you are having many barbecues on the terrace or in the garden, and surely although they are delicious, they are making you a little repetitive, so to avoid falling into routine I have brought you a simple but delicious and refreshing variant in the form of lamb chops with mint.

This is a recipe from the recipe book for an Italian summer that I showed you the other day - the meat section is a constant temptation - and it basically consists of mashing the lamb chops with a little lemon and mint before to pass them by the plate or the embers.

  • Lamb chops, 1 lemon, peppermint, 3 tablespoons of olive oil.

How to Make Mint Lamb Chops

Although your thing to make lamb chops with mint is to use mint, this is much more difficult to get than peppermint, so if you do not have the first one at hand - as it happened to me - we will turn a blind eye and We will use it. It changes the flavor a bit, but the result is just as surprising.

We will start by crushing in a mortar a few mint leaves together with the juice of one lemon and three tablespoons of olive oil. We also add a pinch of salt and reserve.

The next step is to paint the chops with the mixture that we have prepared, making sure that they are well impregnated. We let them steep for an hour or two, turning them frequently. Finally, we go through the griddle or the coals until they are done to our liking and we serve them watering with a little more lemon and mint sauce.
