Reviewing cooking magazines brought to me from airports, I have found that Anglo-Saxons are very fond of pork chops, but at home we have never had much tradition with them. Anyway, my boyfriend loves them, so I tend to look for inspiration in British publications to prepare them. These baked loin chops with potatoes, baby carrots, and feta cheese are her favorite recipes.

I like the idea of ​​combining the protagonist of the dish in the same source, in this case the chops as a protein source, and the garnish based on vegetables and some new potatoes. In addition, the whole is well seasoned with aromatic herbs and a fresh touch of lemon and feta cheese that finishes rounding off all the flavors.

  • Small new potatoes 300 g
  • Baby carrot 150 g
  • Purple Onion 1
  • Granulated garlic 2 g
  • Mustard seeds 2 g
  • Cumin grain 2 g
  • White wine 125 ml
  • Lemon 1
  • Feta cheese 50 g
  • Parsley
  • Fresh thyme
  • Extra virgin olive oil
  • Ground black pepper
  • Salt

How to Make Baked Pork Chops with Potatoes, Baby Carrots, and Feta Cheese

Preheat the oven to 180ºC. Wash and dry the potatoes and carrots if necessary. Cut the potatoes in half or in quarters if they were too large, peel the onion and cut into quarters. Distribute in a large baking dish and mix with a jet of extra virgin olive oil.

Add the garlic, mustard and cumin, season and stir well. Bake 30 minutes, stirring halfway through cooking. Make sure it is not too dry, adding oil or water if necessary.

Meanwhile, cook the chops on both sides on a griddle with some oil, about 3-4 minutes, until they are marked with a golden hue. When the half hour has passed, add the wine and the juice of half a lemon, the herbs and mix well.

Incorporate the pork chops to the source, mixing with the juices from the vegetable roast, season with salt and pepper and add half of the feta cheese on top. Bake about 10 more minutes, until the chops are done.
