The biggest difficulty this dish has is cutting the whole rabbit into small chops, a laborious task in which your trusted butcher or poultry farmer can help you. I have gone to Higinio Gómez who is a reference in Madrid and where you sometimes find these wonders.
The recipe is very simple. It is enough to prepare a mojo of olive oil, garlic and parsley and use it to smear with the chops, previously seasoned. So we can cook them in the oven in five minutes and they will barely have fat.
We spread the chops on a baking tray covered with a silpat or a non-stick sheet, and then lightly varnish them with the garlic and parsley preparation that we have made with the mixer, giving a few touches.
With the oven in the grill position, they will be ready after five minutes. The only drawback is that they are so small that they only have a snack and we need approximately 200 g per person to make it a sufficient portion, accompanied by the salad.
