ONCE continues to surprise with its ideas for the integration of people with visual disabilities; Together with Professor Julián Huertas, they have been teaching monographic cooking courses for blind or visually impaired people for 8 years. In ONCE cooking courses you learn to cook with all four senses, preparing simple and traditional dishes.

According to Julián Huertas himself, the objective is for them to learn to cook dishes that they can then prepare at home as well as to become familiar with and lose their fear of the stove and the oven. More than a hundred students have already passed through his classes, which are held in the ONCE delegation in Madrid, where he teaches them to cook dishes made with ingredients that are easy to buy in the market. Cycles usually consist of five school days.

In the last year they were able to learn to cook an onion and bacon cake as a first course; some veal escalopines in cognac, as a main dish, and a cream cheese with pears, for dessert. All the students participate in the preparation of the dishes and at the end of the class, they either taste them right there, or they take them to consume them at home.

Huertas explains that the objective of the course is not to teach how to heat oil, learn to fry an egg, or understand how to use the oven, stove, microwave or any other appliance. All these technical issues are also learned at ONCE, with experts in visual rehabilitation. Cooking courses are understood more as an advanced level for people who have already passed that initial stage and want to learn to cook.

It may seem very difficult to cook without looking, but sometimes, with ingredients such as love, enthusiasm, perseverance and the desire to improve, we can get the best recipes. Cooking with the four senses is possible thanks to the ONCE cooking courses; It is already 8 years, we hope that they will continue to be many more.
