Cuisine of Portugal: Tomatada with sweet potatoes or Kumato® tomato stew with potatoes

On this occasion we let ourselves be inspired by our Portuguese neighbors cooking a tapa of taken with sweet potatoes, or stewed tomatoes with potatoes.

In Portugal, the potato is present in a multitude of recipes and cannot be absent when it comes to snacking. Also there they know that tomatoes and potatoes make a great couple, and not only as a garnish for their famous cod. In such a simple dish, it is essential that the ingredients are of the highest quality, and with Kumato® we achieve a unique result due to its juiciness and such sweet flavor.

Ingredients for 4-6 people

  • 3 medium potatoes, 1 spring onion, 2 Italian green peppers, 5 Kumato® tomatoes, 100 ml white wine, 1/2 teaspoon oregano, 1/2 teaspoon granulated garlic, 1/4 teaspoon sweet paprika, a pinch of paprika spicy, black pepper, salt, extra virgin olive oil.

How To Make Tomatada With Sweet Potatoes

We wash the potatoes well and cook them in plenty of salted water, until they are tender and can be pierced with a knife. When they are ready, we let them cool out of the water.

Meanwhile, we chop the chives, discarding the green part, and cut the washed peppers into thin slices. We also wash the Kumato® tomatoes and chop them.

Heat three tablespoons of extra virgin olive oil in a large pan or casserole and fry the chives with a little salt, over medium heat, for about 8-10 minutes. We stir from time to time to avoid burning.

Once it is transparent and tender, add the peppers and sauté the whole for 5-8 minutes. Add the Kumato® tomatoes, season and stir well. Let everything cook for about 5 minutes while we peel and chop the potatoes.

Add the potatoes to the casserole, add the oregano, the granulated garlic, the paprika and another pinch of salt, and add the wine. Cook the whole for 5-10 minutes, over low heat, until we leave the stew with the texture that we like the most.

With what to accompany the tomato with sweet potatoes

This recipe for Kumato® Tomatoes Stewed with Potatoes can be prepared in advance and taken out at the game time. We will serve it in small casseroles or bowls to share with a little more snacking, for example some almonds or peanuts, which will add a nice crunchy contrast. This Portuguese air tapa can be served hot, lukewarm or even cold, something that is very tempting on these summer days.
