How to cook noodles or instant Asian noodles to be healthier (and much tastier)


Following the boom that began to experience Asian cuisine in Europe a few years ago, their own versions of products such as the famous instant noodles began to arrive, widely consumed in countries like Japan. They are not exactly a very healthy or sophisticated food, but if we have an emergency, there is a very simple method to turn them into a more than decent dish.

It is explained by Arthur Tong, a Hong Kong man and founder of an Australian store of Asian products; the clue is in a technique called 过 冷 河 (gor lang ho), "pass through a cold stream". The idea is simple: cook the noodles, drain them and rinse them very well with cold water, and then add them to the soup prepared separately. It is applying a little more work, but it hardly takes you more than a couple of minutes, and this way it is possible to eliminate much of the excess sodium and fat that these noodles incorporate.

How to Make Noodles or Instant Asian Noodles

Open the noodle package, remove the noodles and separate the sachet with the seasoning. Bring plenty of water to boil in two different pots. Cook the noodles according to the time indicated by the manufacturer, trying not to overdo it. Take the opportunity to cook the egg as well if it is to be used later.

They usually need very little time, sometimes it is enough to rehydrate them. Separate them with a fork or some Asian chopsticks. Quickly drain through a colander and rinse gently with cold water, stirring with toothpicks. Reserve on the strainer.

In a bowl or deep serving plate, deposit half of the included seasoning. If you have dehydrated vegetables on the one hand, and spices and aromas on the other, reduce only the amount of the second complement, which is the one that is usually more loaded with sodium, sugars and flavor enhancers.

Add one or two tablespoons of the other hot water and stir well to dissolve everything. Add more water to reach the desired volume of soup and add the noodles, stirring well. Top with the desired toppings and toppings such as boiled egg, nori seaweed, chives, coriander or parsley, etc.
