How to cook the juiciest baked chicken breasts: recipe and trick to keep them dry

Unless we are vegetarians or vegans, almost everyone frequently turns to chicken breasts to eat at home. And in January it seems that much more: they are cheap and have a reputation for "diet" food, but also for being bland and boring. But there is a very simple way to cook them so they are juicy without multiplying the calories.

The first thing would be to choose good quality meat, from poultry and that our trusted butcher prepares for us, although I know that today it is not always easy to get it. In any case, my favorite trick to achieve juicy breasts easily is to prepare a quick brine and cook them in the oven, well seasoned.

Ingredients

For 2 units
  • Chicken breast 2
  • Water 1 l
  • Salt 75 g
  • Dijon mustard 50 ml
  • Lemon juice 5 ml
  • Sweet paprika two teaspoons
  • 1/2 teaspoon hot paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon granulated garlic
  • Extra virgin olive oil 20 ml
  • Ground black pepper

How to Make Juicy Baked Chicken Breasts

Dry the chicken breasts with kitchen paper and remove any excess fat. Fill a container with the water, slightly warm, and dissolve the salt. Introduce the breasts ensuring that they are completely covered, cover the container and let stand at least 30 minutes, better two hours, in the fridge.

Preheat the oven to 200ºC and prepare a tray or dish. Remove the chicken from the brine and spread with a drizzle of olive oil everywhere. Add black pepper, lemon juice, the two types of paprika and mustard, and massage well to cover them with this paste.

Bake for about 25-30 minutes, turning them halfway through cooking. Check that they are cooked with a meat thermometer, if available.

What to accompany juicy breasts

These juicy baked chicken breasts can be served freshly made, as is, or wait for them to cool for filleting and cold-eating in a salad or snack. Any garnish will do well, from classic white rice to fried or roasted potatoes, green leaves, vegetables or whatever we feel like. I like to eat them with roasted applesauce.
