How to make zucchini cream in a slow cooker, an easy recipe for healthy dinners

Slow cookers, with the famous Crock-Pot at the helm, are well known for their virtues when it comes to cooking succulent stews, tender meats or legumes for hours without haste. But this appliance is also perfect for much simpler and lighter dishes, such as the typical zucchini cream that is so popular in autumn and winter dinners.

It is as simple as adding all the ingredients to the pot, cover and program the time we want. The vegetables for creams can be cooked in high or low temperature, which allows us to play with the hours according to our schedule. When cooked slowly, the zucchini is very tasty, creating a concentrated and aromatic broth that transforms into a silky texture when crushed.

The recipe we present is simple, but fully customizable. We have not added more vegetables than onion and garlic, and we have not added any dairy, except when serving. It is advisable to use a homemade or good quality vegetable broth, and not add too much. It can always be corrected later.

Ingredients

For 6 people
  • White onion 1
  • Garlic clove 2
  • Zucchini 1 kg
  • Extra virgin olive oil and a little more to serve 30 ml
  • Ground coriander or cumin, 1 teaspoon
  • Salt to taste
  • Ground black pepper to taste
  • Vegetable broth (approximately) 250 ml

How to Make Slow Cooker Zucchini Cream

Wash and dry the zucchini. Cut the ends if desired, without wasting much vegetables, or leave them as is if they are in good condition. Cut into slices and you are in half moons. Chop the onion and garlic cloves, removing the germ if you prefer softer.

Add everything to the casserole of the slow cooker. Season with salt and pepper, drizzle with the oil and add the coriander or ground cumin, or the spices you want. Stir, add broth without covering the vegetables, cover and program 2 hours and 30 minutes on high power. Another option is to use the low power and program about 4 hours.

Once ready, blend with the arm mixer or using a powerful food processor. Taste and correct for salt and pepper. Add more broth if you want more liquid. Serve with a little good olive oil and garnish to taste.
