How to make caramel egg custard. Recipe
Egg flan is one of the simplest and most popular desserts out there. Easy, nutritious and everyone likes it, from children to adults. Like many of these traditional desserts, there are countless recipes and variants. From a simple mixture of whole eggs, sugar and milk to more sophisticated elaborations with the addition of flavorings, cinnamon, orange, coffee, apples, chestnut puree, etc. Here we explain how to make caramel egg custard, a basic enriched recipe.
Ingredients for egg custard
For 4 individual puddings: 200 cc. whole milk, 200 cc. heavy cream (cream), 4 egg yolks, 90 gr. powdered sugar, 2 envelopes of vanilla sugar (or a teaspoon of vanilla essence), 60 gr. of sugar, for the caramel.
Preparation of the egg flan
Heat the milk with the cream in a non-stick saucepan until it comes to a boil. Set aside and let it temper.
Beat the egg yolks with the powdered sugar and vanilla sugar or vanilla essence for 3 minutes, until a homogeneous mixture is left.
Pour into the saucepan and bring to a low heat, stirring with a wooden spatula without stopping, until the cream thickens. It should not boil at any time. When the cream begins to take consistency, remove from heat and continue stirring for a few minutes.
Pass through a fine strainer to remove any lumps. Reservation. Turn the oven to 200º.
Heat the sugar in a pan until it becomes a dark caramel. Pour into individual ceramic molds, turning to spread the caramel along the sides of the mold, as it cools.
Pour the egg cream into the molds and place on a tray. Add hot water until it covers at least half the height of the molds. Place the tray with the custards in the oven preheated to 200º and cook in a bain-marie for 30-35 minutes, or until a skewer inserted in the center of the custard comes out clean.
Take out and let cool apart inside the molds. Keep cold and serve in the same mold or unmold in dessert plates.
Preparation time: 25 minutes.
Cooking time: 30 minutes.
