How to make onigirazu, the funniest Japanese sushi sandwich (recipe with video included)
We had been wanting to prepare the onigirazu sandwich for a long time because we love sushi and this is what today's recipe consists of. Onigirazu is a Japanese sushi sandwich, a very fun bite that is prepared with the same ingredients as other sushi. Our version is vegetable, but this recipe admits many variations and ingredients so it can be varied to taste.
For the onigirazu or sushi sandwich you have to use sushi rice, which keeps its grains glued to each other. It is advisable to moisten your fingers to handle the rice if you do not want it to stick to your hands. Finally, once the nori seaweed is closed, place a carrot stick that marks the direction of cutting so that the filling can be seen well. Once closed you will not remember and it is so beautiful with all the colors in sight.

The most laborious part of this recipe is the preparation of the vegetables and the avocado, which must be washed, peeled and cut in different ways. That's why we started with it and once ready it is a matter of riding and ready. We peel the carrots and cut them into sticks. Finely slice the cucumber with the help of a peeler. Cut the avocado in half, remove the bone and laminate. Peel the onion and dice. We also beat the mayonnaise with a little wasabi until homogenized.
We cover the work surface with plastic wrap and place the nori seaweed on top, with the rough part facing up. We form a square with rice in the center and spread a little of the wasabi mayonnaise and layer the vegetables that we have prepared. We have placed cucumber, onion, carrot, avocado and arugula, but you can vary the order to taste.
We put another square of rice on top and fold the corners of the nori seaweed towards the inside, covering the filling. We wrap well with the plastic wrap, pressing slightly so that the sandwich does not disassemble. We repeat the operation with the other four remaining nori seaweed.
We let the onigirazu rest for about 15 minutes before consuming. During this time, the algae hydrates and acquires a soft and pleasant texture to eat. Cut in half, in the opposite direction to the filling so that the layers and colors of all the ingredients can be seen and serve.
With what to accompany the onigirazu sandwich
At the time of serving, we sprinkle the onigirazu sandwiches with black sesame and accompany them with a sauce such as soy, hoisin, satay, teriyaki or even wasabi mayonnaise if we have left over.
