How to make scrambled eggs with cod, quick and easy recipe


This recipe for cod scrambled eggs seemed like a great option for dinner, but I wasn't sure my kids would like it, so they brought the dreaded fish. I was very happy to see that they congratulated me on this dish, they even told me that the fish was not so noticeable. Quite a compliment.

As I'm a bit of a mess desalting cod, and it's never clear if it's just the right amount of salt, next time I'll use fresh, unsalted cod. For those of you like me, I advise you to control the amount of salt you add. Better to fall short than go overboard.

  • Onion 300 g
  • Extra virgin olive oil
  • Desalted and flaked cod (loins) 300 g
  • Eggs 6
  • Liquid cream to cook a splash (optional)
  • Ground black pepper
  • Chopped fresh parsley

How to make scrambled eggs with cod

We start by chopping the onion very small, heat enough oil in a pan and fry it over low heat, until it is golden brown. Add the crumbled cod and fry it with the onion until all the cooking liquid has been reduced.

We break the eggs in a plate one by one and we add them to the pan. We stir with a spoon until it is set. If we want a creamier scramble we can add a little liquid cream. Sprinkle with pepper and parsley. Serve immediately.
