Garlic rabbit: the recipe that will take you to your childhood

I am very happy to see the campaigns to support the consumption of rabbit meat, since depending on the area in which we live, this white, healthy and tasty meat can be very common in our recipes or almost an unknown ingredient. For this reason, from time to time I publish recipes with rabbit, my favorite being rabbit with garlic, the recipe that will take you to your childhood.

When I try this meat cooked in garlic, with the special touch of wine and lemon, I am transported to Castilian lands, specifically to the province of Toledo, where I lived as a child. There, it was frequent that on weekends we went to a forest farm -my father worked in ICONA- and the rabbit with garlic was a very common dish. So I became fond of consuming this delicious dish that today I am going to tell you in detail.

How to make rabbit with garlic

We start by confit the garlic cloves over low heat in a pan with plenty of oil. Thus, the oil will take on the flavor of garlic and the garlic will be candied, taking color but not burning as we teach you here.

In that oil, we will fry the rabbit slices, once seasoned and lightly passed through flour. You have to take the time to get the slices to brown and so they are well cooked. To do this, it is preferable to work on live or powerful fire, so that the caramelization of the surface of the slices occurs.

When the rabbit has a beautiful golden color, we add the juice of half a lemon and the wine, shaking the saucepan in circular movements, grasping the handles, so that the sauce is linked thanks to the flour and the evaporation of the liquid, continuing until we are left perfect.

We prepare a garnish of fried potatoes, potatoes to the poor or our special garnish of baked vegetables to accompany all kinds of meat recipes and serve while the rabbit in garlic is still very hot, for the enjoyment of diners. The intense flavor of the rabbit and how clean and white the meat is, will delight everyone. (And prepare bread for the sauce that is scary).

Due to the size of the slices and the existence of ossicles, when eating the rabbit with garlic recipe, it is common to use your hands to spread the meat well. With a side of potatoes to the poor, you will not need more to go back to your childhood and eat again a dish of those that are remembered forever.
