I have once commented that the meat that most enters our home menus tends to be poultry, although I tend to reduce its consumption more generally compared to other sources of protein. Chicken is a staple and very versatile, but I'm always looking for new ways to cook it. I liked the idea of ​​these chicken drumsticks with bacon stuffed with mushrooms and goat cheese as soon as I saw it, so it didn't take me long to adapt it a bit in my kitchen.

Now that the mushroom season begins we can use the variety that we like the most, although for recipes like this I almost prefer to use humble but rich mushrooms; They have a milder flavor and are much cheaper. When cooking the chicken in the oven with that bacon or bacon wrap, it is very juicy and with a lot of flavor. Much of the fat will fall in the source in which we bake them, although it must be recognized that it is not a typical chicken recipe for that diet.

  • Small spring onion 1
  • Mushrooms or champignons 150 g
  • White wine 80 ml
  • Worcestershire sauce 3 ml
  • Tender goat cheese 30 g
  • Bacon in wide strips 10
  • Granulated garlic
  • Dried thyme
  • Ground black pepper
  • Extra virgin olive oil
  • Salt

How to Make Bacon Chicken Thighs Stuffed with Mushrooms and Goat Cheese

Preheat the oven to 200ºC. Clean the mushrooms well gently, wash with water if they are mushrooms and dry well. Chop into small pieces. Chop the chives and sauté in a pan with a little olive oil and salt. Add the mushrooms and sauté over high heat. Sprinkle with a splash of wine and cook until the liquid evaporates.

Lower the heat, season and add granulated garlic, thyme and rosemary to taste. Add the Worcestershire sauce and cook until reduced, crushing the mushrooms to leave them almost like a paste. Let cool a little and mix with the goat cheese in a bowl.

Open the chicken thighs and bone, in case we have acquired them with bone. Cut off excess fat that they may have. Add salt and pepper and spread the mixture of mushrooms and cheese, without reaching the edges completely. Close each piece forming firm rolls and wrap each one in two or three strips of bacon or bacon.

Brush with a little oil on a non-stick dish or pan suitable for the oven and place the rolls with the closures down. Bake for about 25-30 minutes, turning occasionally, until lightly browned on the outside.

What to accompany the stuffed thighs

The chicken thighs with bacon stuffed with mushrooms and goat cheese can be accompanied with the garnish that we like the most, although I recommend some grilled vegetables or a simple salad to lighten the menu. They are delicious and satisfying bites, with a couple of pieces per person we will be more than satisfied.
