Today in the morning I have entertained myself by making some crispy white chocolate cookies. They are very easy to make, fun if you have children at home to wet their hands, and above all they are delicious.
The ingredients for about 50 cookies (depending on the size) are 525 g of flour, 5 g of baking powder (Royal type), 180 g of drops of white chocolate, 450 g of butter, 800 g of sugar (600 g of brown sugar and 200 grams of white sugar), I have used 800 white sugar because brown gives the cookies a lot of color. 4 eggs and about 5 grams of vanilla essence, a pinch of salt.
How to prepare: First you have to weigh all the ingredients. On the one hand, sift the flour and add the yeast and a pinch of salt. On the other hand you separate the eggs, the butter in cubes, the sugar and the vanilla.If you have drops of white chocolate, perfect. On the contrary, if you have it on a tablet, you will have to chop it up.
Work the butter with the sugar until you get a smooth cream. Then add the eggs, mixing them slightly one by one. Add the vanilla and then the dry ingredients little by little to avoid lumps. Finally you add the drops of white chocolate.
Then it's time to get your hands dirty a little bit. Form balls of approximately one and a half centimeters and place them on a tray with baking paper. I have tried to make them on a silicone sheet, but I do not recommend it, the edges of the cookies end up browning too much. Separate them about 7 cm from each other and bake them in a preheated oven at 190ºC for about 10 minutes.
When they are finished, you take them out, let them rest for a few minutes and change them to a rack so that they finish cooling.
They are ideal for a family snack, or as in my case I will take them tomorrow for a snack with some friends. Besides having my pregnant wife around here eating them as they come out of the oven ...
