Lemon and polenta cookies: cookie recipe WITHOUT (gluten-free, egg-free, butter-free and sugar-free)

Perhaps it would have been easier to put in the title of the recipe the few ingredients that these lemon and polenta cookies contain and not the many ingredients that these crisp and addictive cookies do not have, perfect for breakfast. But the truth is that I wanted you to see well everything that can be removed from the list of ingredients to a cookie, without ceasing to be tremendously delicious.

I invite you to get out of the routine and try simpler preparations, without so many caloric ingredients or that can produce some type of intolerance. That is why I call these cookies "the universal ones", because the truth is that almost, almost, everyone can take them and also now I want you to be encouraged by them.

Ingredients

For 4 people
  • Ground almonds 85 g
  • Rice flour 80 g
  • Polenta 80 g
  • Agave syrup, 3 tablespoons
  • Mild olive oil, 2 tablespoons
  • Lemon juice 1
  • Lemon zest 1
  • Baking soda, 1/2 teaspoon
  • Salt a pinch

How to make lemon and polenta cookies

We will start by tossing in a bowl, the ground almonds, polenta, rice flour, baking soda and salt. We remove with a wooden spoon and add two tablespoons of the agave syrup, reserving the other, the lemon juice and its zest as well as the two tablespoons of oil. We remove again.

We mix this sandy mass until the dry ingredients are moistened and we can form a ball. We preheat the oven to 180 degrees.

We stretch the dough between two oven papers leaving it six millimeters thick. We cut the cookies with a cutter to our liking and transfer them to a non-stick baking sheet. We bake them for 15 minutes.

Once browned, remove them from the oven and brush them with the remaining agave syrup. When 10 minutes pass, we put them on a rack until they are completely cold.

What to accompany lemon and polenta cookies

These lemon and polenta cookies are delicious as a crisp mid-morning snack or snack. If you like flavors between sweet and salty, be sure to try sprinkling a few flakes of salt once you brush them with the agave out of the oven. And if you like dipping, nothing better than a good glass of almond milk to accompany them.
