Known for more than 5,000 years. Used both to remove the desire in times of famine, and to cure diseases. Main ingredient in the humble and the most select cuisines. This glass of leeks with torreznos and croutons does not detract from either of them.
3 leeks, 2 potatoes, 2 garlic, 1 onion, olive oil, 1 liter and a half of chicken broth, 4 slices of bread, 2 thick slices of Serrano ham with its fat, salt, pepper and nutmeg.
Preparation of the glass of leeks
We clean, peel and chop the leeks, potatoes, onion and garlic. Heat a good drizzle of oil, add the pieces and lightly salt. When they are golden brown, pour the broth into the pot, season with a pinch of pepper and nutmeg, and let it all boil for about 20 minutes.
While we cut very small, the bread and the ham. In a frying pan with very hot olive oil, fry the bread first and then the ham. Reserve it on absorbent paper.
When the vegetables are already boiled, we pass them through the shredder, we taste the salt and we rectify.

Fill a large glass with the leek puree and top with a tablespoon of croutons and another of torreznos.
Important note: If we do not have glasses and we are forced to serve it in deep plates, the process is the same, but we will have to be careful to change the name and stop calling it a glass to call it a "plate or plate" of leeks with pancakes and croutons. Jokes aside, this light puree can substitute for a vichyssoise, an important detail for people who are lactose intolerant.
