Tricolor cup, raspberry, lemon and blackberry. Recipe


The tricolor glass that I present to you is made with a lemon cream and raspberry jelly and another one with blackberries.And I had nothing better to do on Sunday afternoon and I decided to try to innovate in a striking but simple way.

At first I thought of making a lemon cake and adding a blackberry meringue to it, but I didn't really want to make a dough with flour and although I could have used a cookie base, I finally decided to change the format of the support and put a glass. And instead of meringue I opted for a blackberry sweet and a raspberry with a jelly texture.

Ingredients for 4 people

  • For the blackberry sweet we will need 125 grams of blackberries, 125 grams of sugar, 6 grams of neutral gelatin and 100 ml of water.
  • For the lemon cream we will need 6 eggs, 6 lemons, 300 grams of sugar and 60 grams of butter.
  • For the raspberry sweet, 125 g of raspberries, 125 g of sugar, 6 g of neutral gelatin and 100 ml of water.

Preparation of the blackberry sweet

We soak the gelatin in cold water for about 5 minutes.

In a blender we crush the blackberries together with the sugar and make a coolie. Then we mix it with the water and bring it to a boil.

Add the gelatin, stir until it dissolves and remove.

We serve in cocktail glasses and let cool until set.

Preparation of the lemon cream

Mix the eggs and sugar and add the lemon juice. In this case you had lemons from having used them to start a Limoncello that I have made for Noctamine. Mix well and bring to a boil, stirring constantly.

When it has started to boil and thicken, remove from heat and add the butter. We go through a Chinese to avoid any lumps and let it warm to room temperature.

We serve in the glasses once the blackberry sweet is gelatinous.

Making the raspberry jelly

We carry out the same steps as with the blackberry sweet. The difference is that we will let it cool a little at the end before serving it and always when the lemon cream is completely cold.

The result of this tricolor glass, raspberry, lemon and blackberry is spectacular. Or at least that's what those who have tried it say. It combines the flavors very well, maybe the lemon is noticeable a bit more. But it can be changed by making half lemon curd and half pastry cream and mixing.
