Lamb with apple "aioli". Recipe
In quotation marks I have put the word aioli in this recipe that I present today lamb with apple aioli since purists can rightly say that this sauce cannot be called aioli, and even with all reason I am going to be daring and go to dare and I will call this variant apple aioli.
By the way, it is delicious and I can imagine it perfectly accompanying it, a good Iberian pork tenderloin for example.
12 lamb chops, 2 apples, 1/4 glass of oil, 1 egg, 1 clove of garlic, ground pepper, 1 teaspoon of honey, salt.
The preparation of lamb with apple "aioli"
We preheat the oven to 200º centigrade.
We peel and chop the apples, roast them in the conventional oven or in the microwave oven.
In a crusher glass, we put the peeled garlic, the roasted apples, the honey, the egg and a pinch of salt. We crush everything and add the oil little by little until it rises and binds the sauce. We reserve in the fridge.
Season the lamb and put it on a tray in the oven for about 20 minutes.
We serve the chops hot and napadas with the apple aioli.
We can accompany them with baked potatoes or steamed vegetables, for example.
We must monitor the cooking time of the lamb as it will depend on the thickness of the lamb cuts.
